Whip up a delightful Mediterranean style Greek Garden Pasta for dinner, in less than 15 minutes with this super simple recipe full of summers produce. 1 onion - 4 cloves garlic
- 3 cups shredded zucchini
 - 1-2 teaspoon oregano
- 1 teaspoon basil
- 1 teaspoon parsley
- salt and pepper to taste
- 2 large tomatoes
- whole wheat or gluten free pasta
- feta and chopped chives
 This super versatile recipe is designed to use whatever fresh produce you have on hand, so the amounts are a GUIDELINE! The secret to Greek cooking is the feta cheese, oregano, and garlic - the rest is pretty flexible. Think of what you have on hand, and what sounds good - you know your family's likes and dislikes. Make this easy dish fit perfectly into your healthy lifestyle! Put a pot of water on to boil for the whole wheat pasta, or rice pasta if making a gluten free dinner. Cook pasta according to directions. Set aside and keep warm Take a skillet, add a little olive oil and saute 4 cloves of crushed garlic with 3 cups of shredded or thinly chopped zucchini. Chop two large tomatoes into small pieces, set aside. Saute veggies until crisp tender. Add oregano, basil and parsley to veggies, salt and pepper to taste, stirring in thoroughly to coat the veggies. Add the chopped tomatoes and stir, until tomatoes are thoroughly heated. Taste it and adjust any flavorings that need adjusting - remember - you are creating meals with maximum nutrition that your family will love! Experiment! Be brave!
