Shrimp Scampi - Quick and Easy ~ "Red Lobster"
The Prudent Wife adaptation of delectable Shrimp Scampi, one of the most popular recipes on the web, can be whipped out in less than 15 minutes. Made with shrimp, garlic, butter, lemon juice and if you have it on hand, a little white wine. Be sure and time the meal so the scampi doesn't overcook!
INGREDIENTS:
- 1 1/2 pounds medium to large shrimp
- 1/3 cup butter (clarify for better presentation)
- 4-6 cloves of freshly pressed garlic
- 6 green onions, thinly sliced
- 1/4 cup dry white wine (optional) or a splash of white grape juice or extra lemon
- 2 tablespoons lemon juice, fresh if possible
- 2 tablespoons chopped fresh parsley
- salt and pepper, to taste
PREPARATION:
Rinse shrimp and set aside. Heat butter in large skillet over medium heat. Press fresh garlic into butter, cook 1 or 2 minutes or until softened but not browned. Add shrimp, green onions, wine and lemon juice; cook until shrimp are pink and firm, about 1 to 2 minutes on each side. Do not overcook. Add chopped parsley and salt and pepper before serving. Garnish with lemon slices and parsley sprigs if desired.
To Serve:
Begin with a Caesar salad and Cheddar Bay Biscuits, then serve scampi with steamed broccoli and a baked potato (rub the skin lightly with olive oil and sea salt) to replicate Red Lobster. For less than the price of one dinner out, you can make this for the entire family! Enjoy.
